Our Guide To Making Our Irresistible Cornish Craft Rum — The Rosemullion Way

From Cornwall, with Intent
Rum is one of the most varied spirits in the world — and here in Cornwall, we’ve developed our own approach to crafting a distinctive Cornish craft rum, shaped by place, process, and the people behind it.
So when we started Rosemullion Distillery, we weren’t trying to recreate someone else’s rum. As career chemists turned distillers, we simply wanted to make Cornish craft rum that tasted as good as it possibly could.
So that’s what we’ve done. Quietly, carefully, and always with flavour in mind.
It began – and continues – with making it ourselves
Everything starts with molasses — and importantly, we don’t buy in finished spirit.
We ferment and distil it here at our Helford distillery, using our own copper pot stills, so we can shape the character of the rum from the very beginning.
That choice defines everything that follows.
Pot still distillation gives us a spirit with more weight andtexture — something with real depth. Those darker, richer notes are already there before we even think about ageing or blending.
It means we’re not adding character later — we’re building it from the ground up.
The Kind of Rum We Like to Drink
If there’s a thread running through everything we make — from our White Rum through to our Dark Rum — it’s balance.
We’re drawn to rums with depth, but without a flavour profile that shouts about it. The kind you can sit with, relax into, and enjoy — rather than analyse.
In our Dark Rum, that tends to come through as:
- Rich molasses and treacle
- Gentle warming spice — cinnamon, clove, a touch of gingerbread
- Notes of chocolate, dried fruit, and a little liquorice
- A smooth, rounded finish that lingers without becoming heavy
It’s full-flavoured, certainly — but never overdone.
Oak, Used With Restraint
With our Gold Rum and darker styles, we use oak to soften and round the spirit.
You’ll find subtle notes of vanilla and spice, and a more integrated palate in our Cornish craft rum — but the aim is always the same: the rum comes first.
We’re not trying to layer on oak for the sake of it. Just enough to bring everything together and let the spirit show at its best.
And we keep things natural — no added colouring, no unnecessary extras. What you see is simply the result of time, cask, and spirit.
Sweetness — Just Enough
It’s very easy to make rum sweeter. It’s much harder to keep it balanced.
We take a light touch. Sweetness has its place — it can round things out and soften edges — but too much and you lose the detail.
So we keep it in check.
The finish should be clean, not cloying — something that invites another sip, rather than overwhelming the first.
Spiced Rum, without losing the rum
Spiced rum is often where things drift furthest from the base spirit. That’s never been our approach.
Our Spiced Rum starts with the same pot-distilled base and is built up with natural ingredients — citrus, spices, and a carefully balanced blend of botanicals.
The aim is simple: it should still taste like rum — just with an added layer of warmth and complexity.
Not overly sweet, not dominated by vanilla — just a natural extension of the spirit underneath.
A Few Variations On A Theme
Our Honey Rum and Chocolate Rum take things in a slightly different direction, but the thinking is the same.
They’re designed to be enjoyable — a little more indulgent perhaps — but always grounded in the character of the rum itself.
Even when we’re playing with flavour, we’re still aiming for balance.
Where We Sit — and Why That’s Not The Point
We’re sometimes asked how to categorise what we do.
There are elements of traditional English-style rum in there, certainly — but we’re not trying to fit neatly into a particular box.
What we’re really focused on is making rum in a way that feels considered and complete — part of a wider movement toward smaller-scale, craft production, where the process matters just as much as the result.
Everything We Do Is Shaped By a Few Simple Principles:
- Make it ourselves, from molasses
- Use pot stills to build flavour and texture
- Work in small batches
- Keep things natural
- Focus on balance, above all

How To Know That Rosemullion Distillery Rum Is World Class.
Rosemullion’s rums have built a strong reputation on the international stage, picking up awards across some of the most respected global competitions. Over the years, expressions like our Gold Rum and Spiced Rum have been awarded multiple gold medals at events such as the San Francisco World Spirits Competition, the SIP Awards, and the Rum & Cachaça Masters, helping establish the distillery as one of the UK’s most consistently recognised craft rum producers.
More recently, our Navy Rum was named a category winner at the World Rum Awards 2024, a result we’re particularly proud of as it reflects the style and quality we continue to develop. Taken together, these awards highlight not just individual rums, but a consistent approach — producing spirits here in Cornwall that stand up on a world stage.

Final Thoughts
We’re not trying to make the boldest rum on the shelf, or the sweetest, or the most heavily aged.
We just want to make something that feels right — a rum with depth, character, and a sense of place.
Something you can enjoy without overthinking it.
And ideally, something you’ll want to pour again.
